In a city that seems to be evolving by the day, one longtime restaurant is proving that growth doesn’t have to mean starting over; it can mean building on what already works. For Verde owner Paul Arechiga, the recent remodel of the Fishers location is less about change for the sake of change and more about honoring the past while stepping confidently into the future.
Opened in 2009, the Fishers restaurant marked a pivotal moment for the Arechiga family.
“It was our first restaurant in the Indianapolis area,” Arechiga says. “It holds a very special place in our story.”
As Fishers began its rapid transformation into one of the region’s most vibrant communities, Arechiga and his team decided their restaurant should evolve as well.
“This remodel was our way of reinvesting in a community that has supported us from the very beginning,” he says.
The idea for a refresh simmered behind the scenes for years. Verde Fishers rarely slowed down enough to tackle a renovation, but Arechiga says, “Eventually, we realized there’s never a perfect time, so we decided to go for it.”
The result is a thoughtfully redesigned space that blends the warmth longtime customers love with a more elevated, cohesive aesthetic. Now, the Fishers location aligns with Verde’s other restaurants in Carmel, Zionsville, Greenwood and Indianapolis, which share a signature look developed over time.
Guests enter a richer, more layered atmosphere. The updated design uses warm tones, textured finishes and intentional lighting for a moodier, more sophisticated ambiance, without losing the family-friendly spirit at the heart of the brand.
“It’s still very welcoming,” Arechiga says. “It’s the kind of space where you can celebrate a special occasion

or just enjoy a casual night out.”
A new bar, previously missing from Fishers, gives guests a dedicated space for margaritas, cocktails and conversation.
“Mexican food and margaritas go hand in hand,” Arechiga says. “We’re excited to finally offer that experience here.”
Arechiga and his brothers led the creative vision themselves, continuing a tradition that shapes each restaurant.
“Our spaces reflect where we are as a family and as a company in that moment,” he says. “We really enjoy the process.”
Their hands-on approach shows in the details. Guests notice more artwork that adds personality and storytelling to the dining experience. Combined with updated textures and lighting, the space feels immersive and intentional.
Beyond aesthetics, the remodel improves how the restaurant functions each day. The new layout makes the experience more seamless for guests and staff during busy hours, a subtle shift reflecting Verde’s commitment to always refining what they do best.
The evolution goes beyond the space. Verde’s menu grows with the restaurant, adding new flavors and dishes while keeping the classics that built a loyal following.
“Mexican cuisine is always evolving,” Arechiga says. “We love introducing new things for our guests to explore.”
For Arechiga, reinvesting in Fishers was deeply personal. This location launched his career.
“This town gave me the opportunity to become a restaurateur,” he says.

Since opening Verde Fishers, he has expanded into concepts like Quesatacos, Casa Santa and Piedra, a Mexican steakhouse in downtown Indianapolis.
The team’s growth is equally meaningful. Many employees have worked with the Verde family for more than 17 years, demonstrating the culture and relationships they have built.
“This remodel reflects their dedication,” Arechiga says. “It’s incredible to see people who believed in us early on still here today.”
Since reopening, the community’s response has been enthusiastic. The dining room and patio buzz with energy, showing that the refreshed space resonates with longtime patrons and new visitors. While formal celebrations are still in the works for later this summer, Arechiga is already enjoying the moment.
“The support has been amazing,” he says. “Right now, we’re just enjoying having everyone back.”
In many ways, the remodel of Verde Fishers is a full-circle moment, honoring where the restaurant began while embracing where it’s headed next.
