Gustavo’s Largest Location Brings Mexican Culture to Norton Commons

Gustavo’s Mexican Grill has added its largest and perhaps most unique restaurant to its lineup in Norton Commons. Spanning 11,000 square feet, the new restaurant offers three distinct floors, each offering its own experience while keeping intact the traditions Gustavo’s is most known for.

“I want to provide a different experience for the community,” owner Gustavo Reyes says. “I like to bring art from Guadalajara, Mexico, and show it to my customers. It’s a different vibe.”

The restaurant celebrated its grand opening on March 17, 2026, at 10707 Meeting St., becoming the newest Gustavo’s Mexican Grill in the Louisville area. Reyes, who hails from Guadalajara, is determined to serve authentic Mexican cuisine that echoes the culinary traditions of his homeland in a fun environment. The new location replaces a smaller Norton Commons spot just a few doors down.

Each floor has a name and an experience all its own. The first floor is called Agave and is more of a traditional restaurant, with outdoor seating and patio service. Cenote Espiral, the second floor, can comfortably hold larger parties, meetings and events. The top floor, Tahona Lounge, is restricted to guests 21 and older and open primarily in the afternoons and evenings. Each floor has its own bar, and the names draw from Mexican culture.

Reyes says the reception so far has been better than he had hoped.

“It’s been great,” Reyes says. “Everyone is happy and it’s a super nice atmosphere.”

The menu is the same as other Gustavo’s locations in Hurstbourne, La Grange, Crestwood and Prospect Village. Customers can order à la carte items such as burritos, enchiladas, fajitas, tacos and homemade tamales, or choose from a wide selection of chicken, steak, seafood, salad and torta dishes. Twenty-six combination plates showcase different offerings, while signature dishes provide a one-of-a-kind experience that is popular with guests.

“They’re family recipes,” Reyes says. “We get the best ingredients and use high-quality meat. We are always working on new recipes at home that are good traditional dishes from Mexico.” The latest addition continues the growth Gustavo’s has experienced since originally opening its doors in 2010. Reyes started out as a dishwasher who loved to serve others. He always had a dream to bring the vibrant flavors of his hometown to the Louisville area he now calls home.

Reyes says he learns something new with every restaurant opening and benefits from transferring experienced staff from existing locations to new ones.

“Every building we open, we have a better layout,” Reyes says. “You always learn from mistakes in construction. We will see what the future brings.”

Through it all, Reyes is very thankful for the support he receives from the community.
