Green District Salads, a Louisville-based chopped salad and wrap eatery, has come to town with edgy slogans and a cast of athletically fit characters with vegetable heads. Among its marketing logos are a tomato-topped sprinter and a prize fighter sporting a head of broccoli. They promise “The best GD salad in town” and suggest “Eat your GD salad.”

For James and Nicole Plenty, owners of the Green District Salad location at 8350 East 96th Street, what’s most compelling is that the salads and wraps the restaurant serves up to the Fishers community are delicious and filling yet healthy.

Before opening the restaurant, James, who has a doctorate in education, served as the Conducting Fellow and Education Specialist for the Indianapolis Symphonic Choir. Nicole is an Obstetrics/Gynecology MD specializing in Fetal Medicine. Together they had the idea of opening a business that would contribute to the Fishers community, so James began researching options.

“We were interested in starting a business that would be fulfilling to both of us,” he says. “I looked at a lot of franchises and nothing made sense. Nicole wanted to do something with salads. I was researching online when I saw Green District Salads. I loved what I saw.

“I visited both of the locations in Louisville. I tasted the food, talked with the owners and ended up loving the brand. The concept is healthy salads but any of our salads can be made into a wrap. Or people can customize anything and build their own.”

Each of the 11 signature salads offered has a catchy name and fresh ingredients that include vegetables, fruits and lean proteins. The salads and wraps are priced at $9.99, but the build-your-own option starts at $6.99. One option is the “Romaine Calm” which includes chicken, Parmesan cheese, bacon, red onion and red pepper. Another example is the combination of quinoa, beets, shredded carrots, grilled asparagus and chickpeas that are among the ingredients of the “You Are What You Beet.”

“The response so far has been great,” Plenty says. “We are beginning to have repeat customers that come back one or two times a week to have their favorite salad. Our top sellers have been Tequila Mocking Bird made of shrimp, corn, feta cheese, black beans, peppers and onion and Thai One On which is chicken or shrimp, chow mein noodles, cabbage, carrots, edamame and peanuts.”

Green District Salads also has a catering menu. Six of its most popular salads are available in bulk quantities. Prices range from $40 to $70 and feeds up to 12 people. Wrap trays start at $32 for four servings. Two varieties of pasta salad made to serve eight are available at a cost of $12.

“We looked for a location in Fishers that was affordable and fit the footprint of the restaurant,” Plenty adds. “I came across the space where the Which Wich Sandwiches shop had moved from. It had easy access and was the perfect place. We are so glad to contribute a healthy option of a fast-casual eatery to the community.”
