Agave Bar & Grill Owners & Sisters Open Fishers Location

AgaveCooking together as a family serves as a way to preserve culture and keep traditions alive. Sisters Cynthia Zimla and Evelyn Veloz expanded their Agave Bar and Grill concept by opening a second location in downtown Fishers in February.

“We’ve always wanted to open a second location,” Zimla says. “I live in Fishers, and we just realized how much potential the downtown area had for our restaurant.”

The pair had previously chosen another location, but fate intervened.

“We were getting ready to sign a lease on a different property in Noblesville, but I just didn’t feel right in my gut about the location,” Zimla says. “I was taking my son to school at Fishers Elementary, and I took a wrong turn. I happened to see the location because of that wrong turn, and it just fit.”

The menu features recipes the sisters took from their family gatherings.

“During the holidays, our family makes sopes, tamales and birria tacos,” Veloz says. “We put all those on the menu because they’re our favorite recipes we make as a group.”

The two are not just sisters, but twins.

“We’re twins, but we’re very different,” Veloz says. “I was a little nervous at first about working together, but it’s been great. Our whole family works in both restaurants. There is nothing like working with family.”

Zimla hopes guests can feel the love their family shares for Agave.

“Agave started with our parents, but Evelyn and I are the pillars helping it grow,” she says. “Our family is very welcoming to others, so it’s so nice to see our community be so welcoming to us.”

Veloz adds that many residents in the mixed-use building where the eatery sits have become regulars.

“Some come in almost every day,” she says. “We’re so grateful for them. There are a lot of other businesses in the area too. The whole Fishers community has been so welcoming to Agave and us.”

It’s important to the sisters to support other local businesses as well.

“We offer a lot of local beers on our menu,” Zimla says. “Even the paintings on the walls are made by local artists and students. We love to pay it forward.”

The restaurant has a large patio, a bar area for guests 21 and over, and a family dining area.

Agave“The patio area can seat about 40 people, which is great,” Veloz says. “We’ve noticed so many people in Fishers love being outdoors and dining outside. I’m sure the patio is going to be a big hit.”

Family is essential to the duo, so they wanted a familial feel for the restaurant.

“I don’t know if this makes us unique, but we hope people feel like they’re dining at home when they come in the restaurant,” Zimla says. “We want them to feel welcome here, so we wanted the atmosphere to be comfortable and family-oriented.”
